Substitutions


I had a small kitchen victory this week.

I like cooking but I'm not much of a natural at it. I follow recipes and rely on them a good deal. I'm not one of those people who can just whip stuff up or who has a sixth sense about what would be a great addition or what spices to toss in. My hope is that after enough time on the recipe crutch I'll get better at spontaneous culinary masterpieces, but I'm so not there yet.

However, the other night I was making mashed potatoes and only had about one tablespoon of butter, so I added some cream cheese and it turned out pretty well! Way to go me being clever in the kitchen!

(This is probably a pretty duh kitchen substitution, but I was proud of myself. It's the little things.)
